Josephine Cooke is originally from Maitland, New South Wales, Australia.
She graduated with a Bachelor of Nutrition and Dietetics (Honours) from the University of Newcastle in November 2024. During her studies, she completed an honours research project investigating the diets of rural Australians living in NSW at moderate to high risk of cardiovascular disease. This research fueled her passion for improving the lives of individuals in rural and regional communities, where barriers to healthy eating are often more pronounced. Through this project, she also had the opportunity to network with rurally based health professionals and researchers.
Her academic journey included enriching placement experiences, such as conducting honours research and group placements in the vibrant rural town of Tamworth, NSW. These placements offered her firsthand insight into rural living and the unique sense of community that thrives in these regions. Additionally, her clinical placements provided a diverse range of opportunities, including work in a large public hospital, several private hospitals, regional private practices, and an oncology outpatient clinic.
Josephine is passionate about several clinical areas, including gut health, cardiovascular disease management, diabetes management, sports dietetics, and oncology. As an early-career dietitian, she aspires to gain experience across various domains to refine her focus for the future. She is particularly interested in pursuing post-graduate courses, such as becoming an accredited sports dietitian and exploring additional training in FODMAP dietary management.
Outside of her professional life, Josephine enjoys a range of hobbies, including reading, baking, spending time outdoors—whether walking, running, or exploring—and discovering new places to eat and drink.
